2 lbs. assorted oranges, plums, bananas, melon, strawberries, grapes, peaches
sweetened mascarpone
Mascarpone, cream, vanilla, confectionery sugar
24 HB eggs & 2 lbs. bacon
Scones
6 C flour 3 C sugar 12 tsp. bkg powder 1 tsp lemon rind
18 T butter 2 tsp vanilla 6 eggs 3 tsp. lemon extract 1½ C milk 1 lb. butter 1 C honey
Preheat griddle. Combine the flour, sugar, and baking powder. Rub in the butter. Add the raisins, egg, and extract. Add enough milk to make a soft dough. Griddle for 6 minutes a side.
Beijing Pancakes
8 C flour 4 C boiling water
4 T roasted sesame oil oil for griddle
Sift the flour into a bowl. Pour in the boiling water and stir with a wooden spoon until all the flour is incorporated and a dough has formed. Dust your kneading surface lightly with flour and turn out the dough. Knead for 10 minutes, or the dough is smooth and soft. Rinse out the mixing bowl. Place the dough in the bowl, cover with plastic wrap, and let stand for at least 15 minutes or as long as 3 hours. Cut a piece off the dough, about a third of the total, and leave the rest covered. Working on a lightly floured surface, roll the dough out to a thin sheet, no more than 1/8" thick. Work from the center outward as you roll, turning the dough over and dusting lightly with flour if it begins to stick to the rolling pin. Using a 3-inch round cutter, cut an even number of circles out of the rolled-out dough, making 20. Gather the scraps and place them with the covered dough. Paint the top surface of the half of the dough circles with sesame oil. Place an un-oiled dough circle on top of each oiled one. Pour a little oil into a skillet once it is hot, then remove from the heat. Wipe the oil out of the pan with a paper towel. Roll out one double circle until a uniform 1/16th thick, then roll out the remaining circles. Let one cook for one minute. The top should bubble a bit. Turn over and cook for one more minute. Remove from the pan with a spatula. Split apart the two layers and wrap in a towel.
Sautéed Vegetables
4 bell peppers 1 zucchini 4 C broccoli ½ lb. snowpeas
1 lb. mushrooms 4 garlic cloves
½ C olive oil salt and pepper, cubebs, grains of paradise oregano
Slice the veggies. Heat the oil in a large, heavy skillet. Sauté the onions and garlic on low until golden, then the rest of the veggies. Sauté the mushrooms and garlic, and season with salt and pepper.
Fricassee of Chicken
10 lbs. skinless boneless chicken thighs and breasts
1 C homemade chicken stock 6 onions, chopped
garlic marjoram, thyme, salt, pepper
fresh parsley 1 C white wine butter and olive oil
Slice or cut up the chicken into uniform pieces. Sauté, in stages, in the butter and olive oil, then dump into a Dutch oven. Sauté the onions, then the garlic and add to the oven. Deglaze with the wine and add that to the oven. Add the seasonings and stock, and simmer until the meat is cooked through and the flavors have blended, about 20 minutes.
Marinated Tomato and Mozzarella Salad
6 tomatoes, cut into wedges 2 T virgin olive oil
6 leaves fresh basil, minced salt, black pepper
2 T. balsamic vinegar 1 lb. fresh mozzarella, sliced
Combine everything and serve at room temperature.
